At Empire Heaven Coffee, every cup of coffee is crafted with care and passion.
We select only specialty-grade beans from trusted farms and roasters. Each batch is professionally evaluated and scored at the source by the farms and roasters to ensure top quality, flavor, and unique character.
We meticulously select coffee from a wide range of grades across Thailand, including beans that have reached the finals of national coffee competitions. Each batch is carefully curated to offer you a premium and thoughtfully chosen selection, ensuring a fair and exceptional coffee experience with every cup.
Cupping: Professional Coffee Tasting

Before the beans reach your cup, they undergo a cupping process, which is the professional method for tasting and evaluating coffee. During cupping, trained tasters assess the coffee’s aroma, flavor, aftertaste, acidity, body, balance, sweetness, cleanliness, uniformity, and overall impression. This process ensures that only the best beans — those with a full and distinctive profile — are selected for our menu.
How the Coffee Is Scored
The beans are assessed using standard specialty coffee scoring methods, which focus on key aspects of quality:
· Aroma – The fragrance of the coffee before and after brewing
· Flavor – The taste profile, including notes like fruity, floral, chocolatey, or nutty
· Aftertaste – The pleasant lingering taste after each sip
· Acidity – The brightness or liveliness of the coffee
· Body – The texture and mouthfeel of the coffee
· Balance – The harmony between flavor, aroma, acidity, and body
· Sweetness – The natural sweetness that enhances smoothness
· Clean Cup – Purity of flavor without off-notes

· Overall – The general impression and enjoymentEach category receives a score, and the total score reflects the overall quality of the coffee. Beans that score highly are considered specialty-grade, meaning they meet the highest standards for taste, aroma, and balance, as assessed by the source farms and roasters.
How to Read the Score
Specialty coffee scores are interpreted as follows:
· 80–84.99 points – Very Good: Coffee with clear and pleasant flavors, well-balanced and enjoyable.
· 85–89.99 points – Excellent: Coffee with complex, vibrant flavors and a refined profile.

From farm from Thailand to cup, each step is carefully managed to ensure quality, consistency, and a unique flavor experience.

From Harvest to Cup
Our coffee cherries are hand-picked at peak ripeness to capture optimal sweetness and aroma. After harvesting, the beans undergo different processing methods to highlight their natural characteristics:
· Washed Process: Beans are fermented in water, producing clean and bright flavors.

· Honey Process: Beans are partially fermented with mucilage intact, giving sweet, fruity, and complex notes.

· Dry/Natural Process: Beans are dried with the fruit on, creating rich, wine-like flavors.

After processing, beans are carefully hand-selected to remove defects and ensure only the highest quality moves forward.Innovation

1. Semi-Carbonic Maceration
· A partially closed CO₂ fermentation process.
· Whole coffee cherries are placed in a partially sealed tank, allowing natural fermentation inside the fruit.
· Result: Sweet and smooth flavors with pronounced fruity notes and a soft body.
· Key Feature: More complex than traditional fermentation but milder than anaerobic methods.

2. Anaerobic Fermentation
· Fermentation occurs in a completely oxygen-free (sealed) environment.
· Controlled by pressure, temperature, and duration.
· Result: Enhanced complexity, bright acidity, and fuller body.
· Key Feature: Produces unique flavors that are unlike conventional coffee.

3. Yeast Fermentation
· Uses selected yeast strains during fermentation.
· Enhances fruit, floral, and chocolate notes.
· Result: Balanced, complex flavors with a distinctive character.
· Key Feature: Creates a “signature profile” unique to the farm or brand.

After drying, the coffee undergoes hulling and polishing to remove the outer parchment and refine the beans’ surface, ensuring clean, uniform, and high-quality green coffee ready for roasting.


Roasting, Grinding, and Brewing
Our beans are roasted by highly skilled, professional roasters in the United States, with years of experience in crafting exceptional coffee. Each roast is carefully selected and tailored to the bean’s origin, variety, and flavor profile, ensuring that every cup delivers a balanced, vibrant, and memorable taste.
After roasting, the beans are ground according to the brewing method and carefully brewed to unlock the full potential of each bean, giving you the perfect cup every time.
